Hope Apple

Hope J. Apple, 83, died peacefully under hospice care, on July 6, 2025. She was born on January 15, 1942, to Paul Sparks Cousley and Hope Jackson Cousley.

Hope earned a Bachelor’s degree in Library Science from Northwestern University in Evanston, IL. She later completed a Master’s degree at Tulane University in New Orleans. Her library career spanned decades. She supported her husband through medical school, working in her chosen field. Later, she worked at the Skokie, IL, library as a research librarian. She was co-author of several research books over the years and was an avid reader.

Hope was justifiably proud of her work for Senator Paul Simon as an advocate for prisoners and their families.

More recently, Hope owned and operated Jackson House, a Bed and Breakfast, in the family home that had been in her mother’s family for more than a century. She lovingly restored the home and welcomed guests with her signature, sweet potato pie. Originally, the pies were baked by Hope’s dear friend and partner in the Bed and Breakfast, Eunice Perry. After Eunice’s death, Hope ran the Bed and Breakfast with the help of many talented people.

Hope loved animals, especially dogs. She was founder and benefactor of Riverbend Humane Society.

A loyal and enthusiastic baseball fan, Hope proudly cheered on the St. Louis Cardinals.

Hope is survived by her cousins, including Julie Bates of Moorpark, CA. She hosted multiple family reunions in her home, allowing her family to be together and share precious memories.

She was a devoted friend to fellow librarians, Pat Groh and Merle Jacob. She leaves a nephew, Lee Apple, whose wife, Azusa, did beautiful art work of some of Hope’s favorite animals. She was blessed by the loving care she received from her dear friend, Vicki Sasek, during her last years.

Cremation rites will be accorded by Elias, Kallal and Schaaf of Godfrey.

Interment will take place in Alton City Cemetery alongside her parents, who preceded her in death.

Memorials are suggested to the Riverbend Humane society.

A Celebration of Life will be held at a later date.

Memorials are suggested to the Riverbend Humane Society.

The world is a better place for having had Hope in it. She will be deeply missed by all who knew her.
