The Illinois State Fair kicked off Thursday night with the Twilight Parade – and with the fair, of course, comes fair food.
Can you really be health conscious at a place that prides itself on frying whatever food it can get its hands on?
According to dietician Kathy Levin with Memorial Health Systems in Springfield, yes. You just have to look.
“Look for things that are more grilled than fried, and you’re looking even for things like a sugar free lemon shake up instead of one that has all the sugar in it,” Levin says.

That’s not to say mini donuts, fried Oreos and cheese curds are off limits – but Levin suggests sharing them with large groups of people, or, eat a couple now and take them home. Levin also says the fairgrounds provide ample opportunity for exercise, as long as you walk instead of taking the tram or a golf cart everywhere.
