Knowing how to eat the vegetable soybean edamame is the trick to enjoying the soy protien food, according to an expert at the U of I. Edamame are packed full of protein, fiber, and some essential vitamins. University of Illinois Agricultural Research Service Scientist Marty Williams says the problem is, many aren’t quite sure how to consume the bean.
Williams recommends boiling the pods for a few minutes, draining them, then adding a little sea salt. You can then dip the pod in soy sauce and suck out the seeds. He says the seeds can also be used to make hummus, dips, and in soups, rice and pasta dishes.
