1/3 cup olive oil
3 garlic cloves, minced
1/8 cup chopped fresh basil
1 cup Chardonnay
8 oz fresh mozzarella cheese, diced
1 lb farfallini cooked
When ready to prepare boil a large pot of salted water and add pasta. Cook until al dente - about 8-10 minutes. While pasta is gently boiling, turn on the broiler in the oven. Remove plastic wrap from tomatoes. Add wine and cook under the broiler - not very close to flame - middle rack for about 10 minutes. Watch it closely and turn them if necessary. The tomatoes will blacken and char a bit.
Drain pasta, do not rinse and put in nice serving bowl. Remove tomatoes from oven and pour entire contents over pasta. Add the fresh mozzarella and toss to coat. Serve immediately.
