Garlic Aioli

3 cloves garlic
2 eggs
2 tablespoons vinegar
2 tablespoons lemon juice
1 tablespoon chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
1 cup oil
Combine the garlic, eggs, vinegar, lemon juice, parsley, salt and pepper in a food processor or blender and puree. With the blender on add the oil in a slow stream and continue to process until the mixture has formed a thick emulsion. Use this in place of packaged mayonnaise for a fresh-homemade taste!
