Ingredients:3 chicken breasts, baked and shredded
2-3 Roma tomatoes, finely diced
1/2 red onion, thinly sliced
1/2 cup shredded mozzarella cheese
2 heads boston lettuce
Freshly grated Parmesan cheese
Directions:In large bowl, toss the chicken, tomatoes, red onion, mozzarella cheese. Add enough garlic aioli to moisten. Spoon into lettuce leaves and place on platter. Grate Parmesan cheese over and serve with french bread or focaccia.
