2 zucchini squash
1 red bell pepper
8 oz. mushrooms
1 small sweet onion, chopped
2 cloves garlic, minced
3 tablespoons olive oil
1/4 cup parmesan cheese
1/4 cup bread crumbs
Cut zucchini, red pepper and mushrooms into bite size pieces. In 11x7 or 13x9 pan mix cut veggies with onion, garlic and olive oil. Salt and pepper to taste. Spread evenly in pan.
Slice tomatoes and cover veggies with slices. Evenly coat tomatoes with a layer of parmesan and then a layer of bread crumbs. Drizzle a little olive oil on top.
Bake at 350 degrees until veggies are tender but not mushy, approx. 20 - 30 minutes.
