1 English muffin, sliced
1/4 red pepper
Place small skillet on medium heat and add 1 tablespoon olive oil. Cut the red pepper into thin slices and add to pan. Cook about 6-7 minutes turning once.
While pepper is cooking toast your English muffins until golden brown. Remove pepper from pan and reserve.
Drain extra oil from the pan and then add the eggs. Cook them over easy.
Place one egg on each muffin half, then add peppers on top and finish with fresh grated parmesan cheese.
