Lemon Garlic Paste:
Zest from 1 Lemon
5 Peeled Garlic Cloves
1/2t Black Pepper
1t Fresh Herbs
(Oregano, Rosemary, Tarragon)
1T Olive Oil
4 Skin on Chicken Thighs
2T Soy Sauce
2T Olive Oil
Paste: Mash above with a mortar &; pestal or mash &; chop on cutting board until a blended paste.
Chicken: Toss thighs in soy sauce then slide your finger between skin &; thigh to loosen skin. ; Put about a teaspoon of paste in between skin &; meat. ; Rub remaining paste on skinless side of thigh.
Coat lightly with olive oil then grill, starting skin side down. ; Cook over medium heat 12-15 minutes each side. ; Cook to 165º;. ;
Let rest 10 minutes before serving.
