Grilled Vegetable Salad

Ingredients:

2 Yellow Squash
2 Zucchini
1 Red Bell Pepper
1 Green Bell Pepper
2 Portobello Mushrooms
1 Red Onion

Marinade:
1/2c Soy Sauce
1/4c Olive Oil
1T Italian Seasoning or Dried Basil and/or Oregano
1t Granulated Garlic
Black Pepper &; Pepper Flakes to taste.

Dressing:
1/3c Balsamic Vinegar
1/4c Olive Oil
1T Dijon Mustard
Fresh Basil
Salt &; Pepper to taste.

Directions:

Mix marinade in a large bowl. Cut squash &; zucchini on a bias about 1/2”;; thick. Peel red onion &; cut in quarters leaving the onion attached to the roots. Toss zucchini, squash, onion &; portobellos in marinade. Let rest 10-15 minutes. Put peppers on the grill &; let skin blacken on all four sides. Remove &; place in a paper bag.


Put squash, zucchini, onions &; portobellos on grill. Cook until grilled on both sides &; cooked 3/4 through. Cool &; cut into 1/2”;; strips. Rub skin off peppers &; cut into 1/2”;; strips.

Mix Vinegar, mustard, basil &; salt &; pepper. Drizzle in oil while whisking. Toss veg. with dressing. Serve as is or top with crumbled Feta cheese.
