Roma Style Grilled Pizza

2T Warm (100º;;) water
1 pkg. Yeast (2 1/4 tsp)
1c Cold Water
3c Flour (1 lb.)
2T Olive Oil
1T Honey
1t Salt

To Cook:
1/4 Dough recipe, room temp rolled out
Shredded Mozzarella
Sliced Prosciutto
Sliced Red Onion
Sliced Artichoke Hearts
Fresh Basil


Dough: Put 2T warm water in mixing bowl. ;; Add yeast &; proof 5 minutes. ;; Add 1c cold water &; 1c flour, stir &; set one hour. ;; Add salt, oil &; honey then 1 1/2c flour &; mix into dough. ;; Add remaining flour if dough is too sticky. ;; But dough should not be too firm. ;; Knead 15-20 minutes then let rise one hour. ;; Punch down, let rest in refrigerator for one hour (to 5 days max). ;; Then remove from refrigerator and let come to room temperature. Cut in 1/4, roll each into a ball &; roll out.

To Cook: Roll dough ball to 8”; round. ;; Prepare other ingredients &; have them in a convenient place-you must work quick. ;; Toss pizza on grill &; cook one side. Sprinkle sheet pan or cutting board with cornmeal &; place crust on it raw side down. ;; Garnish top of pizza with toppings. ;; Slide onto grill. ;; Close lid if you have one. ;; Cook until cheese is melted &; bottom is crispy
