2 Large Eggs
1 &; 1/2 c All Purpose Flour
Pinch of Salt
2 t. Olive Oil (optional)
1 to 2 t. Herbs (optional)
Food Processor Method
Put eggs, salt &; optional oil in processor bowl. Pulse to mix. Add flour & close bowl. Run on low until dough ball forms. Knead 15 minutes and wrap in plastic & let sit 1 hour.
Make a mound with the flour on a pastry board. Make a well in the dough and put in the eggs, salt & optional oil. Using a fork, mix the wet ingredients then start incorporating the flour from the bottom of the well, working from the outside in. When the dough is too firm to continue to use the fork, begin kneading the dough by hand. Work the dough about 10 minutes until dough is smooth and elastic. ; Knead 5 more minutes, wrap in plastic & let sit 1 hour.
