Ingredients:- 3 poblano peppers roasted, skinned & seeded
- 1 avocado
- 1 lg. clove garlic
- 1 medium tomato diced
- 1-1/2 tablespoons lime juice
- pinch salt
Directions:Place all ingredients in food processor or blender until well combined. Add 1-2 tablespoons water to desired consistency if too thick.
To roast poblanos, place on grill or gas stove burner and cook on all sides until skin is black. When cool the skin can be easily removed.
About this Recipe:You can also make this into a salad dressing by adding more water to thin out.
Great with tortilla chips or on your tacos.
