1/8 cup finely chopped cilantro or Italian parsley (or mixture)
2 cloves of fresh garlic minced
2 tablespoons olive oil
2 tablespoons vinegar (I use red wine vinegar)
2 tablespoons water
juice from 1/2 lime
pinch salt &;; freshly ground pepper
pinch crushed red pepper
1 lb raw deveined and peeled shrimp (bigger is better!)
Mix first 8 ingredients in bowl. Add shrimp and toss to coat. Marinate for 1/2 hour.
Cook your favorite way:
1. Heat olive oil in skillet. Saute shrimp until cooked thru - about 7 - 9 minutes depending on size of shrimp.
2. Thread shrimp onto skewers by running the skewer thru both ;;the head and tail ends (makes a C shape) so shrimp do not fall off. Cook on heated grill about 3-4 minutes per side.
