Spinach Artichoke Dip

• 1 lg clove garlic minced
• 1 TBL minced onion
• 1/4 cup butter
• 1/4 cup flour
• 2 cups milk
• 1 cup grated Parmesan cheese
• 1 tsp hot sauce
• 2 tsp lemon juice
• 1/2 cup sour cream
• 1/2 cup frozen spinach - thawed, squeezed and chopped
• 1 can artichoke hearts or bottoms diced
• 1/2 cup white cheddar cheese shredded
Melt butter in saucepan on medium low and saute garlic and onions until tender. Add flour and cook for 5 minutes. Add the milk and cook at medium until it boils stirring frequently. Add Parmesan cheese, hot sauce and lemon juice. Cook until cheese is melted. Remove pan from heat and cool 5 minutes. Stir in sour cream, artichoke hearts and spinach. Transfer to serving bowl and sprinkle cheddar cheese on top. Microwave or bake until cheese on top melts. Serve with tortilla chips.
