The Madison County Health Department is offering some tips to avoid food poisoning this holiday season.   There’s always lots of parties over the holidays, and that means food sitting out a long time.  As a general rule, you want to be careful about eating things like raw oysters, egg drinks, mousse and bread pudding, and sushi at a party.

Environmental Health Services Manager Mary Cooper says party hosts need to try and keep food at the proper temperature, and avoid cross-contamination.

Cooper comments

Cooper reminds to keep all counters, sponges, and towels clean as well.  It’s estimated that as many as 250,000 cases of food borne illness occur each year in Illinois.
