A new sweet treat – and it’s not even fried – is at the Illinois State Fair this year: miniature cheesecakes, from Lindsay Bachman of That’s So Sweet in Lexington, Ill. Dairy building superintendent Marla Behrends, the industry relations manager in Illinois for the Midwest Dairy Association, says Bachman is a past blue-ribbon winner for cheesecake, and her business is booming.

“She actually started out in her kitchen making them, and started out a business using about 12 pounds of cream cheese a week,” Behrends says, “and now she orders 250 pounds of cream cheese a week, and does some weddings – four or five a weekend.” If you have the will power to avoid sweets – even at the fair – you could try a glass of milk. Behrends says for every glass sold at the dairy building at the fair, the association will donate a glass of milk to a food bank. Illinois has 1,200 farms with dairy cows, for a total of 98,000 milk cows (2011), which produce 1.9 billion pounds of milk (2010), according to University of Illinois Extension.
