The cupcake queen of Southern Illinois is now at chef school in Chicago.  Cupcake baker Chloe Stirling of Troy, age 12 and on her way to seventh grade at Triad Middle School in St. Jacob, was the impetus behind the new law allowing small-time operators – less than $1,000 a month in sales -- to prepare food for sale to the public in a home kitchen instead of a commercial kitchen, if the food is labeled as home-prepared. The push for the new law came after she was busted under the previous law by the Madison County Health Department.

Now she’s in a commercial kitchen, at “baking camp” at Kendall College in Chicago, a hospitality and culinary school.  “I really like working in the commercial kitchen because I don’t really have all the equipment that they have here, so it’s really cool that I get to work with the professional equipment that I don’t get to use at home,” she said.  Chloe says she’ll be expanding beyond cupcakes to cream puffs and scones. Her mother says Chloe was previously self-taught, so this baking camp is a great opportunity to learn from the pros.
